Quickie

In spite of my once-a-week-weigh-ins-only rule, I just hopped on the scale. If I really power through this weekend, there’s a good chance I will hit 30 lbs lost by Monday, meaning 30 lbs lost in month 1. Pretty exciting stuff that I just had to share with someone.

Anyway, I need to get moving! I have cleaning and shopping to do. Have a great (long) holiday weekend!

Chicken Roll-Ups with Mushrooms, Garlic and Thyme

Driving home from work the other day, I had a stroke of genius. I was thinking about the cremini mushrooms I had in the fridge that needed to be used up, and it hit me: mushrooms… garlic… THYME… rolled up in chicken! Wow. The thyme is a perfect complement to the mushroom flavor, and the chicken stays so tender and juicy! Sometimes, my brain has winning ideas.  Continue reading

New Coping Mechanisms

Today, I had a really trying day at work and was blindsided by some pretty disappointing news. My normal reaction to sadness or anxiety or disappointment is to EAT. I’m capitalizing it because I don’t just eat, I EAT. I would buy a family-sized bag of potato chips (preferably Middleswarth Kettle Cooked Sour Cream & Onion… maybe Utz… Who am I trying to kid? I’m not picky), probably a pint of Hershey’s ice cream, and maybe even a fifth of Kraken rum. I would sit on the couch and HOUSE all of it. OK, so I wouldn’t drink all of the rum since I get pretty pukey after about 3 mixed drinks, but that’s not the point. (Lightweight.)

On my 45-mile drive home from work, visions of cheeseburgers and subs and pizzas boogied through my imagination like 20-foot-high dancing snacks at a drive-in movie theater. I craved comfort so badly that I felt a physical longing nearing panic for something (anything!) grease-laden and high in trans fats.

Buffalo Chicken Meatloaf

I can hear the groans now. “Ugggghhhh, meatloaf!”

Anyway, I love meatloaf, and if you love buffalo chicken anything, you’ve just got to try this. Very little prep time, super moist, and SO MUCH FLAVOR! Sadly, I didn’t have any celery or bleu cheese on hand, but I did swap in feta instead of the bleu cheese. We went without the celery this time… but you can bet it’ll be in there next time!

So my loaf pan is a little deeper than 3 inches.

I even got my Nikon out for this one 😉

Funny story: after I portioned out D’s dinner, I called him out to the kitchen. He took one look at his plate and said, “What’s this? Cornbread?” No, sir. Not even a little close.

The results are in:

  • Starting Weight: 353.4 lbs
  • Last Week’s Weight: 332.6 lbs
  • Current Weight: 328.2 lbs
  • This week’s change: -4.4 lbs
  • Change overall: -25.2 lbs

10.1 pounds to go to my 10% goal!

To say I’m pleased is an understatement! I also want to say that I’ve been avoiding posting my weight until now, but I’m not doing myself any favors. Maybe the shame and embarrassment of shouting my weight to the internet will motivate me to stay on track 🙂

Cheesy Spaghetti Squash and Broccoli

I picked this gem up at Food Doodles. It’s cheesy and delightful and only uses 1 WPA on Simply Filling! No, it’s not like mac and cheese, but I loved it anyway. D even liked it in spite of his reservations on eating any sort of squash (did I mention I bought a TON of squash this week?). I had never prepared spaghetti squash before, and no one ever mentioned to me how terrifying it is! I totally had to Google how to cut it open without chopping my fingers off… and D had to step in at the last minute and apply brute strength.

As you can see, it takes a bit of time to make, but most of that time is oven time. I baked the spaghetti squash for 50 minutes, and while that was going on, I was prepping other meals. Then, while I had something else in the oven, I was prepping this casserole.

Weekend Prep

So, I did manage to stay on track the rest of the week, and I didn’t even switch back to regular PP tracking. I’m pretty proud, though my husband did give into his sympathy cravings. He’s skinny and can do stuff like that. Ugh!

In other news, I am having a super productive weekend. I spent most of yesterday planning my shopping list and getting my coupons in order. Today, I did my grocery shopping, submitted my receipts to Checkout 51 and Receipt Hog (thanks to rowmangham’s tips!!), trimmed/labeled/bagged all my meat for the freezer, and started cooking to get a jumpstart for lazy weeknights. I will post the recipes later this evening. Oh, and my husband is currently doing all the dishes from my awesome cooking spree. I consider that a win.

Bottomless Pit Syndrome

I am having a very blah day. I wasnt planning to blog today, but ended up thinking that maybe it would be good to post about my first day where I’m just not feeling it.

Every month, I come down with what I refer to as Bottomless Pit Syndrome. This happens – you guessed it – as a PMS symptom. All I can think about is greasy, nasty food, and nothing ever satisfies it. I’m not actually hungry. I’ve had plenty of delicious food, and I’ve managed to hold it together so far. I am just really grumpy about it! Also, I’m retaining a ton of water, which is always uncomfortable and makes my knees ache. Continue reading

Week 2 Weigh-In

Ok, so I’m also throwing in week 1’s results.

Week 1: -19.0 pounds

Week 2: -1.8 pounds

Total loss: -20.8 pounds

I am super amazed that I managed to lose weight during week 2 in spite of the ASTRONOMICAL loss during week 1. I have never lost so much in a single week.

This week’s goal: implement activity. D and I did yoga yesterday. So far, so good!
